How do I restore an older version of a page?

Open "History" in the sidebar, choose the page, and press "Roll back to this" on the version you want. The last 20 published versions of every page are kept.

Rolling back publishes the old version as a new one, so it can be undone in turn. Only published versions are kept, not every draft.
